Are you talking about plants or vampires?
In crypto it's freezing part of your holding for period as a way of contributing to the blockchain. This is done in the expectation of reward.

I found the snippet following a quick websearch, and don't really know anything else. There does seem to be a lot of information out there, but you have to mine it.
My nasty cynical mind reckons that, like real banks, the blockchains are more than willing to hang on to your assets in exchange for promises of jam tomorrow, and a relevant factor will be a balance between the value of the jam and the possible drop in value of your assets during the time they're frozen.
I am totally incompetent to advise you, but I'm sure you will find the information you need. Maybe ask a vampire.
